Russian potato “piroshki”
Quick recipe -
Boil and mash potatoes, mix with chopped fried onions and season with salt and black pepper (about one medium onion to two large potatoes).
Make a basic sourdough and roll out into a centimeter-thick circle about ten centimeters in diameter.
Place a heaped tablespoon of the potato mixture into the middle, and seal the dough at the top.
Heat oil (about a centimeter deep) in a frying pan on a high heat, and fry on both sides until golden brown.
